CHEF OMAR DHIAB
Born in Paris to Egyptian and Tunisian parents, Omar Dhiab is one of the most promising young chefs on the Parisian gastronomic scene. Passionate about cooking since childhood, he draws inspiration from his roots and family memories to create an authentic and generous cuisine, where emotion always comes first.
Trained in some of France’s finest establishments – from the legendary Train Bleu to prestigious Michelin-starred institutions such as Pavillon Ledoyen, Hôtel Raphaël, Lasserre, and L’Abeille at the Shangri-La – he refined his craft under the guidance of renowned chefs. In 2019, he took over the kitchens of Loiseau Rive Gauche and earned a Michelin star. In 2022, he opened his own eponymous restaurant in Paris, awarded one Michelin star in March 2023, just six months after opening.
His signature style? A cuisine full of heart and character, blending the rigor and precision of French technique with Mediterranean generosity. He places condiments, sauces, and the transmission of culinary gestures at the center of his approach, always driven by flavor and sharing. In 2025, Omar Dhiab revealed a more personal side through ELBI, a place that truly reflects him: somewhere between a refined wine bar, a Parisian bistro, and a cuisine inspired by his Egyptian roots.
