After receiving a Michelin star in March 2023 for his eponymous fine-dining restaurant, Omar Dhiab opened this second, more personal establishment in May 2025: an Egyptian bistro and wine bar reflecting his own style. Elbi ("heart" in Arabic) pays homage to his Egyptian paternal and Tunisian maternal roots—Sunday family cooking, holidays spent with his aunts in Cairo—without sacrificing any of the precision acquired in top restaurants.
At Elbi, Omar Dhiab reinterprets the treasures of Egyptian and Tunisian cuisine. His cooking follows a controlled progression of temperatures, from delicate raw dishes to intensely roasted ones. Hawawshi, spiced pigeon, crispy taamiya: each dish tells a story where Parisian modernity and Mediterranean authenticity create a unique culinary experience.
Elbi's cuisine celebrates the art of cooking and the finest ingredients.
